I am making this recipe with left over sweet potatoes that I chopped and stored in the freezer, which is an excellent way to preserve fruits and veggies that are near spoilage.
Ingredients
- 4 cups chopped potato
- 1/2 cup sweet onion
- 1 tsp of minced garlic
- 1 cup chopped kale or green veg of choice
- 1/2 cup red pepper
- 4 eggs or half a block or tofu
- 1 tbs of olive oil
- salt and pepper to taste
Directions
- Heat olive oil in sauté pan then add onion and garlic sauté until translucent (do not let garlic brown)
- Add in red pepper and potato sauté until tender
- add in kale and cook until kale starts to wilt
- add in your eggs or tofu cook (if adding tofu only cook until heated though)
- Season to taste.
