Potato Hash

This Potato Hash is delicious and affordable it will keep you full until lunch and give you the energy needed to start your day. I gathered these ingredients from my local Shoprite Supermarket.
I am making this recipe with left over sweet potatoes that I chopped and stored in the freezer, which is an excellent way to preserve fruits and veggies that are near spoilage.

Ingredients
  1. 4 cups chopped potato 
  2. 1/2 cup sweet onion
  3. 1 tsp of minced garlic
  4. 1 cup chopped kale or green veg of choice
  5. 1/2 cup red pepper
  6. 4 eggs or half a block or tofu
  7. 1 tbs of olive oil
  8. salt and pepper to taste

Directions
  1.  Heat olive oil in sauté pan then add onion and garlic sauté until translucent (do not let garlic brown)
  2. Add in red pepper and potato sauté until tender 
  3. add in kale and cook until kale starts to wilt
  4. add in your eggs or tofu cook (if adding tofu only cook until heated though)
  5. Season to taste.
