Vegetarian Chili

               Vegetarian Chili with a side of Sweet Potato

This chili can be served with any side of your liking but I prefer to eat it with a delicious baked sweet potato. This meal is not only delicious but affordable I gathered my ingredients from my local Aldi Supermarket. 



INGREDIENTS FOR CHILI 
  1. 1 can chickpeas 
  2. 1 can corn
  3. 1 can chili beans
  4. 1 can kidney beans 
  5. 1 pack of low sodium chili seasonings 
  6. salt and pepper (season to taste)
  7. 1 jar of favorite tomato sauce
  8. half a can of tomato paste
  9. 1/2 cup water 
DIRECTIONS.
  1. Wash and strain chickpeas,corn, and kidney beans and add to a large pot with chili beans.
  2. Add Chili seasonings, salt and pepper to pot and stir.
  3. Add tomato paste, and tomato sauce in to pot, then in empty tomato sauce jar add a 1/2 cup of water and empty into pot and stir.
  4. Simmer on med heat for 20 min
  5. let cool and add to meal prepping container with side of your choosing.
Sweet Potato
  1. Pre heat over to 350 degrees Fahrenheit
  2. spray pan with non-stick spray
  3. Placed washed potato in pan
  4. cook for 30-40 min until fork tender
The total cost of the chili is $3.83 
I was able to create 5 dinners with this recipe
The bag of sweet potatoes was 4.00 and contains 8 potatoes
